Tamales are dumplings made from corn-based dough and are wrapped and steamed in corn husks. As they are time consuming to prepare, they are traditionally made only during the festive season and also in large quantities.
Romeritos is a green leafy vegetable which resembles a rosemary plant and is used to make a festive dish called romeritos en revoltijo. This dish is also a popular family food at Lent.
Pozole is a hearty hominy broth made up of pork or chicken and seasoned with chillies and garlic. It is a wholesome party food and is also a popular Christmas dish. Garnished with lettuce or cabbage, avocado, oregano, finely sliced radishes, and lime slices it makes a tempting sight on the table.
The crunchy fried Buñuelos are usually served with a hot drink and make a scrumptious treat in the cold winter months. They are made form a yeasted dough with a dash of anise and is deep-fried, then soaked in a syrup of brown sugar guava and cinnamon, and are served with powdered sugar.
5) Ensalada de Noche Buena
This colourful salad is a Christmas day speciality and is made up of lettuce and beet, but the other ingredients may vary according to the region. The ingredients may consist of oranges, apple, Jicama, pineapples, pecans or peanuts, and pomegranate seeds as an embellishment, and is served at Christmas Eve dinner.
